About the company:

Bokashi translates to “fermented organic matter” – which for us means reusing waste to develop something useful again out of something typically thrown out. This is the fundamental practice we will build Bokashi upon – do not create more waste, but instead use any waste for further development.

Our roots are inspired by Japanese movements such as Wabi Sabi (a concept centered around the acceptance of transience and imperfection) in conjunction with our local Indonesian ingredients and heritage – delivering a marriage focused around delivering the best quality and health-forward offerings possible with a unique combination of local and international flavors.

We are currently seeking for Head Chef who will be responsible to ensures the efficient operation of such food production areas. To constantly analyze cost and quality of food production, knows to manage within set budget and adheres to time management include studying recipes, setting up menus and preparing high-quality dishes, delegate tasks to kitchen staff to ensure meals are prepared in a timely manner and familiar with sanitation regulations.

Essential Duties and Responsibilities:

  • Controlling and directing the food preparation process
  • Approving and polishing dishes before they reach the customer
  • Managing and working closely with consultant corporate Chef
  • Creating menu items, recipes and developing dishes ensuring variety and quality
  • Determining food inventory needs, stocking and ordering
  • Ultimately responsible for ensuring the kitchen meets all regulations including sanitary and food safety guidelines
  • Being responsible for health and safety
  • Being responsible for food hygiene practices
  • Controlling and directing the food preparation process and any other relative activities
  • Constructing menus with new or existing culinary creations ensuring the variety and quality of the servings
  • Approving and “polishing” dishes before they reach the customer

  • Plan orders of equipment or ingredients according to identified shortages. Arrange for repairs when necessary
  • Remedy any problems or defects
  • Be fully in charge of hiring, managing and training kitchen staff
  • Oversee the work of subordinates
  • Estimate staff’s workload and compensations
  • Maintain records of payroll and attendance Comply with nutrition and sanitation regulations and safety standards
  • Foster a climate of cooperation and respect between coworkers

Requirements:

  1. Proven experience as Head Chef or related positions
  2. Exceptional proven ability of kitchen management, in inventory, financial reports
  3. Ability in dividing responsibilities and monitoring progress
  4. Up-to-date with culinary trends and optimized kitchen processes
  5. Good understanding of useful computer programs (MS Office, restaurant management software, POS).
  6. Credentials in health and safety training
  7. Degree in Culinary science or related certificate
  8. Experience using relevant technology and equipment.
  9. Experience in reporting and emergency response planning.
  10. Excellent communication and interpersonal skills.
  11. Outstanding organizational and leadership skills.
  12. Committed and reliable
  13. Good English communication
